Abstract
The problem of meeting nutritional needs has shaped lives of societies throughout history as much as their economic lives and relations with other societies. In this thesis, which analyses an important part of the Hittites? daily life, several questions such as what the Hittites eat and drink in their daily life, what their basic foods are, where they are cooked and prepared, what names are given to foods and drinks in the Hittite language have been dwelt upon. A definite periodic differentiation has not been made due to several reasons such as diversity of the subject covered, scarcity of information available, taking place of eating and drinking culture in a historical process. Because of the similar reasons, the subject is dealt with on an expanded time-scale in order to determine food and drink items and to evaluate eating and drinking habits of the people of the Hittite period. It is thought that the subject, in this way, will contribute to determination of agricultural products grown abundantly in the Anatolia in that period and how these products were processed. As a data collection method, before all else, written sources such as catalogues, periodicals and articles were analysed. In the light of data acquired after this study, it is determined that the Hittites obtained foods from nature by various ways such as hunting, gathering, farming and animal husbandry, and then ate their fill in an unostentatious way. Moreover, it is understood that the Hittites produced abundantly wine and beer from fruits and crops grown extensively in the Anatolia and they frequently consumed these drinks as part of their daily diet as well as items for giving presents. In consequence, it is ascertained that in the Hittite cuisine there were meat dishes that had been cooked in a simple but delicious way and various soups; in addition, bread and pastry were prepared with a wide variety of substances in different ways as a basic diet of their daily life, and the Hittites had accomplished to enrich their cuisine in terms of content, forms and presentation within the bounds of possibilities at hand.
